Pigments derived from natural sources, display a wide range of colours and are usually regarded as safe. Among those pigments, anthocyanins assume an important role when dealing with natural
colourants. These polyphenolic compounds constitute the largest group of water-soluble pigments throughout the plant kingdom. These natural pigments are usually associated with red fruits, but
are present also in vegetables, roots and cereals.
