[Character]:
1. Yellow or orange yellow powder, brown liquid.
2. It is easily soluble in water, ethanol water liquor, not soluble in acetone and oil.
3. Ph value has almost no influence to its color value. It’s steadier than beta-carotene in either ph4-11. Especially, Crocin will be bright yellow when in alkali situation. The water solution of the pigment has a bright and stable golden-yellowish hue, especially in alkaline solution, with the absorbance peak at 440nm.
4. The revivification-resistance and microbe-resistance are excellent.
5. The pigment also has a good stability to light, heat and microbe.
6. The pigment has a good dyeing ability to starch and protein.
7. Metal ions have no influence on it but Fe. It becomes black when it met Fe.

[Application]: It can be used as a natural pigment for flour products, noodles, candy, cookies, drinks, wine, beverage, dairy product, fish and tinned food, cosmetics, sugar coating for tablet and cosmetics etc.
