The rocoto is one amazing pepper.
It has thick walls, like a bell pepper, but very hot. It has been cultivated in Peru for thousands of years.
Rocoto is also known by its scientific name Capsicum pubescens (hairy pepper).
The Rocoto pepper is among the oldest of domesticated peppers, up to as much as 5000 years ago by the Incas.
If you are the kind of person that loves "the heat" but you just can't take "the burn" inside, this is the paste for you.
Rocoto peppers are known to be much gentler on the body than typical peppers.
This pepper will give you a nice, comfortable "all around" warm feel instead of a burning, stinging lip.
How hot is rocoto ? In Scoville Units, used to measure the heat of various peppers, ROCOTO measures at 70, 000 Units. ( For comparison, Habanero peppers measure at 100, 000 - 350, 000 Units).
Scoville units measure the amount of CAPSAICIN, which is the chemical in hot peppers that makes them hot.
The pubescens varieties like rocoto contain a unique set of capsaicinoids (pungency compound), causing some people to believe they are hotter than habaneros.
